They spent winters in the valley where the climate was milder and visited the hot springs for bathing and healing. Castle Rock, called Eagle Rock by the tribes, was and remains a sacred site." Boise Valley Bannock tribes belonged to the "tuuˀagaidɨkaˀa" (black trout eaters). Boise Valley Shoshone belonged to the "Yahandeka" (groundhog eaters) grouping. They were among the early mounted Shoshone bands. They traveled over a considerable range by the beginning of the nineteenth century, with their main hunting lands along the lower Boise River and Payette River. When Donald MacKenzie developed the Snake country fur trade after 1818, the most prominent of the Boise Shoshone, Peiem (a Shoshoni rendition of "Big Jim", their leader's English name), became the most influential leader of the large composite Shoshoni band that white trappers regularly encountered in the Snake Country. In 1811, Wilson Hunt, employed as an agent in the fur trade under John Jacob Astor, organized and led the greater part of a group of about 60 men on an overland expedition to establish a fur trading outpost at the mouth of the Columbia River. This expedition passed through the Boise valley, and was the first ever time a white American has entered the region. Because of the War of 1812 and the lack of U.S. fur trading posts in the Pacific Northwest, most of the route was not used in the following two decades, and thus Snake Country remained free of settler incursions. After the conclusion of the war of 1812, until the 1840s, Oregon, while officially "jointly administered", was solely dominated by the British Hudson's Bay Company (HBC), which had a land connection to the inland of the Canadian Prairies via York Factory Express. Snake Country, including Boise Valley remained independent and relatively free of settler passage and incursion. There were two main reasons for this. Firstly, the general region east of the Cascades and west of the Rockies was described at the time in the media and literature of the eastern US as the "Great American Desert", an arid unproductive region, unsuitable for habitation. This discouraged settlers from traveling to the region of Boise; however, Oregon Country, on the other side of the Cascades, was a desirable destination for them. Nevertheless, the British had an official policy of discouraging American settlers, and settler incursions into Boise Valley along the Oregon Trail remained low until the early 1840s. The HBC established a fort in the region, the Old Fort Boise, 40 miles (64 km) west, near Parma, down the Boise River near its confluence with the Snake River at the Oregon border.

Estimates for the number of Basque descendants living in Chile range between 2.5 and 5 million; the Basque have been a major, if not the strongest, influence in the country's cultural and economic development. In Bolivia, the War of the Vicuñas and Basques (Spanish: Guerra de Vicuñas y Vascongados), was an armed conflict in Charcas Province that lasted between June 1622 and March 1625, fought between Basques and "Vicuñas"; an informal term for non-Basque Spaniards in Upper Peru, a name obtained through the habit of wearing hats made of vicuña skins. Competition over the control of the silver mines in Potosí, Lípez and Chichas surged in the early 17th century, pitting Basques and Vicuñas against each other. The Vicuñas had initially employed legal and political measures attempting to block the Basque attempts to monopolize control over the cabildo (municipal government) of Potosí and the silver mining sector. The war pitted different sectors of the viceregal administration against each other, as some supported the Basque claims for hegemony whilst others had a conciliatory approach to the Vicuña rebels. Personalities involved in the conflict included the president and oidores of the Royal Audiencia of Charcas, treasury officials and the corregidor of Potosí and the visitador (sent to the area in order to audit fiscal accounts). Basque place names are to be found in the Americas, such as Nueva Vizcaya (now Chihuahua and Durango, Mexico), New Navarre (now Sonora and Sinaloa, Mexico), Biscayne Bay (United States), and Aguereberry Point (United States). Nueva Vizcaya was the first province in the north of the Viceroyalty of New Spain (Mexico) to be explored and settled by the Spanish. It consisted mostly of the area which is today the states of Chihuahua and Durango (the original Durango is a known city in Biscay). In Mexico most descendants of Basque émigrés are concentrated in the cities of Monterrey, Saltillo, Reynosa, Camargo, and the states of Jalisco, Durango, Nuevo León, Tamaulipas, Coahuila, and Sonora. The Basques were important in the mining industry; many were ranchers and vaqueros (cowboys), and the rest opened small shops in major cities such as Mexico City, Guadalajara and Puebla. Despite the predominance of the white race, its extension in the mountains ... has projected over Colombia's map the prototype of its race; in Medellín with the industrial paisa, entrepreneur, strong and steady ... in its towns, the adventurer, arrogant, world-explorer. ... Its myths, which are an evidence of their deep credulity and an indubitable proof of their Iberian ancestor, are the sequel of the conqueror's blood which runs through their veins". United States The largest of several important Basque communities in the United States is in the area around Boise, Idaho, home to the Basque Museum and Cultural Center, host to an annual Basque festival, as well as a festival for the Basque diaspora every five years. Reno, Nevada, where the Center for Basque Studies and the Basque Studies Library are located at the University of Nevada, is another significant nucleus of Basque population. Elko, Nevada, sponsors an annual Basque festival that celebrates the dance, cuisine and cultures of the Basque peoples of Spanish, French and Mexican nationalities who have arrived in Nevada since the late 19th century. Texas has a large percentage of Hispanics descended from Basques who participated in the conquest of New Spain. Many of the original Tejanos had Basque blood, including those who fought in the Battle of the Alamo alongside many of the other Texans. Along the Mexican/Texan border, many Basque surnames can be found. The largest concentration of Basques who settled on Mexico's north-eastern "frontera", including the states of Chihuahua, Durango, Coahuila, Nuevo León, and Tamaulipas, also settled along Texas' Rio Grande from South Texas to West Texas. Many of the historic hidalgos, or noble families from this area, had gained their titles and land grants from Spain and Mexico; they still value their land. Some of North America's largest ranches, which were founded under these colonial land grants, can be found in this region. California has a major concentration of Basques, most notably in the San Joaquin Valley between Stockton, Fresno and Bakersfield. The city of Bakersfield has a large Basque community and the city has several Basque restaurants, including Noriega's which won the 2011 James Beard Foundation America's Classic Award. There is a history of Basque culture in Chino, California. In Chino, two annual Basque festivals celebrate the dance, cuisine, and culture of the peoples. The surrounding area of San Bernardino County has many Basque descendants as residents. They are mostly descendants of settlers from Spain and Mexico. These Basques in California are grouped in the group known as Californios. Basques of European Spanish-French and Latin American nationalities also settled throughout the western U.S.

However, popular stereotypes characterizing Basque as "the oldest language in Europe" and "unique among the world's languages" may be misunderstood and lead to erroneous assumptions. Over the centuries, Basque has remained in continuous contact with neighboring western European languages with which it has come to share numerous lexical properties and typological features; it is therefore misleading to exaggerate the "outlandish" character of Basque.

Breaches of advertising standards In September 2011, after receiving a complaint submitted by online investigations company KwikChex, the UK Advertising Standards Authority (ASA) launched a formal investigation into Tripadvisor's claims to provide trustworthy and honest reviews from travelers. The ASA found that Tripadvisor "should not claim or imply that all its reviews were from real travellers, or were honest, real or trusted", and as a result of the investigation, Tripadvisor was ordered to remove the slogan "reviews you can trust" from its UK website. It changed its hotel review section slogan to "reviews from our community." Tripadvisor said the branding change had been planned for some time and that changes began in June 2011, before the ASA investigation. ASA commented that "it was concerned that consumers might be fooled by fraudulent posts since the entries could be made without any form of verification", but recognized that Tripadvisor used "advanced and highly effective fraud systems" in an attempt to identify and remove fake content.Approximately 30 hotels have been penalized on the website by the company for suspicious reviews, including a Cornwall hotel that bribed guests to leave positive reviews of the hotel. History The present-day location of Caldwell is along a natural passageway to the Inland and Pacific Northwest. Emulsified sausage Emulsified sausages are cooked sausages with a very fine texture, using the combination of pork, beef, or poultry with fat, salt, cure, flavorings, and water. These ingredients are emulsified at high speed in a food processor or blender. During this process, the salt dissolves the muscle proteins, which helps to suspend the fat molecules. Temperature is an important part of the process: if the temperature rises above 60 °F (16 °C) for pork or 70 °F (21 °C) for beef, the emulsion will not hold and fat will leak from the sausage during the cooking process. Pâté, terrine, galantine, roulade Pâté and terrines are often cooked in a pastry crust or an earthenware container. Both the earthenware container and the dish itself are called a terrine. Pâté and terrine are very similar; the term pâté often suggests a finer-textured forcemeat using liver, whereas terrines are more often made of a coarser forcemeat. The meat is chopped or ground, along with heavy seasoning, which may include fat and aromatics. The seasoning is important, as they will generally be served cold, which mutes the flavors. The mixture is placed into a lined mold, covered, and cooked in a water bath to control the temperature, which will keep the forcemeat from separating, as the water bath slows the heating process of the terrine. Pâté and terrine are generally cooked to 160 °F (71 °C), while terrine made of foie gras are generally cooked to an internal temperature of 120 °F (59 °C). After the proper temperature is reached, the terrine is removed from the oven and placed into a cooling unit topped with a weight to compact the contents of the terrine.

Salt serves four main purposes in the preservation of food in the charcuterie kitchen. The first is inducing osmosis: this process involves the movement of water outside of the membranes of the cells, which in turn reabsorb the salted water back into the cell. This process assists in the destruction of harmful pathogens. The second is dehydration, which means the salt pulls excess water from the protein, which aids in the shelf life of the protein, as there is less moisture present for bacterial growth. Fermentation is the third, in which salt assists in halting the fermentation process which would otherwise completely break the meat down. Finally, salt assists in denaturing proteins, which in essence means the structure of the proteins is effectively shifted, similar to the effects of cooking. Before the discovery of nitrates and nitrites by German chemists around 1900, curing was done with unrefined salt and saltpeter. As saltpeter gives inconsistent results in preventing bacterial growth, nitrate and nitrite (in the forms of sodium nitrite and sodium nitrate) have increased in popularity for their consistent results. Nitrates take a considerably longer period of time to break down in cured foods than nitrites. Because of this, nitrates are the preferred curing salts for lengthy curing and drying periods. Nitrites are often used in foods that require a shorter curing time and are used for any item that will be fully cooked. Eventually, a portion of the nitrates will be converted into nitrites by bacterial action. Nitrite has multiple purposes in the curing process. One purpose is flavor, the nitrites giving a sharp, piquant flavor to the meat. Second, the nitrites react with substances in the meat to produce nitric oxide. Nitric oxide prevents iron from breaking down the fat in the meat, thus halting rancidity. The binding also creates the characteristic reddish color found in most cured meat. Finally, the nitrite inhibits the growth of botulism-causing organisms that would ordinarily thrive in the oxygen-deprived environment in the sausage casing. German scientists originally named botulism poisoning Wurstvergiftung ('sausage poisoning'). The term botulism derives its name from the Latin term for "sausage". Eating cured and processed meat products has been linked to a small increase in gastric cancer, as well as chronic obstructive pulmonary disease and colorectal cancer. The negative effects are presumed to be caused by nitrates and nitrites, as well as nitrosamines which are formed by nitrites reacting with meat.

A public eating-establishment similar to a restaurant is mentioned in a 512 BC record from Ancient Egypt. It served only one dish, a plate of cereal, wildfowl, and onions. A forerunner for the modern restaurant is the thermopolium, an establishment in Ancient Greece or Ancient Rome that sold and served ready-to-eat food and beverages. These establishments were somewhat similar in function to modern fast-food restaurants. They were most often frequented by people who lacked private kitchens. In the Roman Empire, they were popular among residents of insulae. In Pompeii, 158 thermopolia with service-counters have been identified throughout the town. They were concentrated along the main axis of the town and near public spaces where they were frequented by the locals. The Romans also had the popina, a wine bar which in addition to a variety of wines offered a limited selection of simple foods such as olives, bread, cheese, stews, sausage, and porridge. The popinae were known as places for the plebeians of the lower classes of Roman society to socialize. While some were confined to one standing room only, others had tables and stools and a few even had couches. Another early forerunner of the restaurant was the inn. Throughout the ancient world, inns were set up alongside roads to cater to people travelling between cities, offering lodging and food. Meals were typically served at a common table to guests. However, there were no menus or options to choose from. Early eating establishments recognizable as restaurants in the modern sense emerged in Song dynasty China during the 11th and 12th centuries. In large cities, such as Kaifeng and Hangzhou, food catering establishments catered to merchants who travelled between cities. Probably growing out of tea houses and taverns which catered to travellers, Kaifeng's restaurants blossomed into an industry that catered to locals as well as people from other regions of China. As travelling merchants were not used to the local cuisine of other cities, these establishments were set up to serve dishes familiar to merchants from other parts of China. Such establishments were located in the entertainment districts of major cities, alongside hotels, bars, and brothels. The larger and more opulent of these establishments offered a dining experience similar to modern restaurant culture. According to a Chinese manuscript from 1126, patrons of one such establishment were greeted with a selection of pre-plated demonstration dishes which represented food options. Customers had their orders taken by a team of waiters who would then sing their orders to the kitchen and distribute the dishes in the exact order in which they had been ordered. There is a direct correlation between the growth of the restaurant businesses and institutions of theatrical stage drama, gambling and prostitution which served the burgeoning merchant middle class during the Song dynasty. Restaurants catered to different styles of cuisine, price brackets, and religious requirements. Even within a single restaurant choices were available, and people ordered the entrée from written menus.

There were 47,965 housing units at an average density of 81 units per square mile (31 units/km2). A liquor license (or liquor licence in most forms of Commonwealth English) is a governmentally issued permit for businesses to sell, manufacture, store, or otherwise use alcoholic beverages. Canada In Canada, liquor licenses are issued by the legal authority of each province to allow an individual or business to manufacture or sell alcoholic beverages. Usually several types of liquor licenses are available to apply for within each certain province. There are many regulations which apply to all types of liquor licenses. For example, each license must indicate the time, place and the maximum amount of sale. These licenses also apply to special events, which may occur outside of the normal setting in which alcohol is served. License holders must strictly follow all the terms and rules to avoid suspension, fines for non-compliance or revocation. Most provinces also specify identification regulations in determining eligibility of patrons.

Sale permit: These permits last for 12 hours and are authorized for charitable, educational, religious or community service functions. Prices for the alcoholic beverages served are set by the permit holder. Non-sale permit: These permits are used to authorize the serving of alcohol at functions outside a private dwelling, including weddings, staff parties, or reunions. Alcoholic beverages are not allowed to be sold with this permit. Cost-recovery permit: These permits are issued to private individuals for private functions such as weddings and reunions that are not eligible for a regular sale permit. Alcoholic beverages can be sold with this permit, but the price is limited to $2 per drink or the cost of the beverage (whichever is greater).

Tavern license: Issued primarily for the purpose of selling alcohol in public establishments including bars, pubs, restaurants and nightclubs. Special-use license: Issued for restaurants that do not primarily focus on alcoholic beverages but are served on special occasions. Manufacturer license: Issued to authorize applicants with establishments primarily based on the manufacturing of alcoholic beverages. Europe Finland In Finland, a liquor license from the Regional State Administrative Agency (Aluehallintavirasto) is needed for businesses manufacturing, serving or importing alcohol. Licenses are usually non-limited but licenses for limited periods also exist. A liquor license can be granted to any mature natural or legal person who has not been declared bankrupt. Persons applying for a license also need to be able to support themselves financially and be generally trustworthy. There also separate rules for the premises alcohol is served in. Liquor licenses are not transferable. Before 2018 Finnish liquor licenses were divided into classes A, B and C. A class A license allowed serving alcohol up to 80% per volume, a B class license up to 22% volume and a C class license only fermented beverages up to 4.7% per volume. In 2020, the typical cost for a liquor license in Finland was 450 to 650 euro.
